Ed Roy and Leonard "Lee" Fontenot are both full-blooded, authentic, registered Cajuns from the bayous of Louisiana.  Having grown up in the heart of Cajun Louisiana, these two guys speak both French and Anglish .......often at the same time!  Mais yea!

Lee and Ed have a long background in broadcasting, entertaining and cooking.  Ed Roy has been invited on numerous occasions to bring his cooking talents overseas and has fans in Switzerland, France, Belize and even a few in Louisiana!

Chef Lee says:
 
"I have been cooking since I was about 10 years old.  Living on a farm in Opelousas, my dad had many laborers to help him with the crops.  My mother was quite ill and the practice at the time was to feed your employees breakfast and lunch as part of their daily wages. One of my older sisters had that duty for breakfast. 
 
Then, my mother would coach me to fix stews, gumbos, smothered steak or chicken, or whatever, along with a side dish of either green beans or corn; and, of course, plenty of rice and gravy.  I was pretty short and I had to stand on a Coke box, or some similar object, to reach the top of the stove.  I learned how to fix many dishes from her over the years. 
 
While my wife, Sylvia, was in nursing school, I again assumed the kitchen duty--for my 4 kids. 

I have catered banquets for various entities, including private business and church benefits, cooking for as many as  400  guests at one time. Most of the time I take control of the kitchen and dispatch only certain duties to someone else but, never to “stir in the Pots.” 
 
I have participated in cookouts with many civic orginizations and in the Eighties, How men Cook was the top chef of the day with my original recipe of Crawfish and Corn Maque Chou.
I have original recipes of this dish--that and Rice Dressing, Gumbos, (of all flavors), cooked Chaudin(--Panse)- Meatball Stew, Soups, Spaghetti Sauces, plus a variety of wild game and, of course, seafood of all types. My motto is: “You Hook ‘em, We Cook’em., all except Alligator, Possum and Muskrat.
 
In all, I would say that I have been cooking for the last 57 years for my family and friends, as well as for special engagements.

About Le Chef Ed Roy

Born on the bayous of South Louisiana in the town of Grand Coteau, Ed is a full "pedigreed" Cajun and speaks English, French and Spanish…sometimes all together at the same time.

In his college career, Ed won numerous National Speech and Debate Honors while attending University of Louisiana, Lafayette. He later gained graduate school credit at both Texas A&M and Florida State Universities. 

Roy served as a Professor of Aerospace Science at the University of Southwestern Louisiana.

Ed Roy has been the President of Ed Roy, Ltd. since its incorporation in April of 1976.  This firm is a Commercial Weather Service which has developed a new method of presenting color graphic weather information to companies that have weather sensitive operation.  This service has been used internationally as well as across the United States. Roy has served as an expert meteorological witness on numerous occasions in Federal, District and City courts for over 20 years.

Ed is also an Airline Rated pilot and flight instructor.  He has logged over 12,000 hours of flight time in both single and multi-engine aircrafts as both pilot in command and instructor.  He was awarded the coveted "Eye of the Storm" award at Keesler Air Force in 1980.  Since that time, he has flown in to the eye of most major hurricanes in the Atlantic, Caribbean, and Gulf of Mexico.

In 1992, Ed was elected to the Lafayette Parish Council - District D and  in 1995 served as the Council President. 

He was honored as the University of Southwestern Louisiana Outstanding Alumnus of the Year in 1997. 

Ed served for 15 years as a Detective with the Lafayette Parish Sheriff’s Office in the Criminal Intelligence Division and has recently opened a Private Detective Agency.

National appearances include a Guest Chef appearance on Lifetime Network "The Main Ingredient" with Robin Mattson (Janet Green on "All My Children") and a Guest Cajun Meteorologist appearance on KUSI’s "Morning Show" in San Diego, California.  Ed has also appeared in numerous movies including Casey’s Shadow, The Drowning Pool, and as the Doctor in “Certain Death”…. Ed is also a contributor to "Paul Harvey News and Comments" on ABC Radio….

 

Basically, he just can’t seem to keep a job!
